Mozzarella Laboratory

We organize meetings where participants will learn the biological cycle of the cow and trace "the path of the milk from the cowshed to the table …". You can watch from life all the daily activities that are carried out within a modern livestock farming with its production of raw milk and its derivatives. Cattle will be shown at various stages of growth. From newborn calves to lactating cows you can see what they eat and where they live, their habits in the barn and pasture and their habitats.
The visit includes access to the milking room where (with the use of suitable
clothing provided by us and not disturbing), visitors can observe the operations of control, preparation and milking of the animals in order to obtain fresh milk and learn all the characteristics of the product.
Everything is marked by the various production stages of the curd. Participants will be involved in groups of about 5 in the preparation of a mozzarella knot and will directly experience the magic of cheese making (the transition from milk to cheese and / or mozzarella). Following you will enter the laboratory of ice cream, where you can watch the transformation of milk into ice cream and learn about nutrition (no dyes, preservatives, added fats and gluten) and finally tasting  ice cream, mozzarella and / or ready- made chocolate.
To make the experience more "tasty",  small breaks will take place in  the structure-tend to taste the local traditional country foods: bread and tomatoes with olive oil and salt, freshly made bread and cottage cheese, ricotta cheese and jam, yogurt, mozzarella cheese and sour cream, desserts, chocolate or vanilla pudding or pannacotta.

Duration of workshop: about 2 hours (excluding travel)
Minimum number of participants: 4 people
Maximum number of participants: 20 people
Cost of workshop (4 to 8 people): EUR 20 per person (including local products tasting).
Cost of workshop (9 persons onwards): EUR 15 per person (including local products tasting).
